This has been fermented in 50% new oak with MLF and ageing sur lie for 20 months. This has a profile like no other – accents of lavender and star anise are mixed into the lime juice and lemon drop base. It has a soft and silky palate filled with a mineral and almost salty quality to it – that acidity plays a major part in the brilliance of this wine. Not many Chardonnays can spend so long in oak but retain a freshness, a true feat. Orange skin and brioche on the finish.
